Bar Manager
Job Summary
The Bar Manager is responsible for the overall management and day-to-day operation of the
restaurant's bar, ensuring high standards of beverage quality, service, cleanliness, efficiency, and
profitability. The Bar Manager leads and supervises all bartenders and bar staff and works
closely with the Restaurant Manager and Front of House / Floor Manager to ensure smooth and
efficient restaurant operations.
Key Responsibilities
Oversee the daily operations of the bar and ensure consistently high standards of
beverage quality, presentation, and service.
Lead, train, supervise, and manage all bartenders and bar staff.
Prepare staff schedules and ensure appropriate staffing levels to meet operational
requirements.
Conduct pre-shift briefings and communicate menu changes, promotions, events, and
operational requirements to bar staff.
Ensure beverages are prepared according to established recipes, portion sizes, and
presentation standards.
Manage bar inventory, including alcoholic and non-alcoholic beverages, mixers,
garnishes, and bar supplies.
Conduct regular stock counts, monitor usage, wastage, breakage, and variances, and
report discrepancies to the Restaurant Manager.
Monitor beverage costs, portion control, and stock levels to minimize waste and support
profitability.
Ensure all deliveries are properly checked, recorded, stored, and secured.
Monitor bar sales and ensure all cash handling and POS transactions are accurate and
comply with company procedures.
Maintain high standards of cleanliness, organization, and presentation of the bar and
storage areas.
Ensure bar equipment is properly maintained and report repairs or maintenance
requirements.
Handle guest enquiries and complaints professionally and escalate matters to the
Restaurant Manager when necessary.
Ensure compliance with company policies, health and safety requirements, food safety
standards, responsible alcohol service, and licensing regulations.
Assist with promotions, special events, and private functions as required.
Provide the Restaurant Manager with relevant sales, inventory, staffing, and operational
reports.
Qualifications, Experience & Competencies
Bachelor's Degree or Diploma in Hospitality Management, Business Administration, or a
related field is preferred.
Minimum of three (3) years' supervisory or management experience in a high-end
restaurant, hotel, bar, or fine dining establishment.
Proven experience supervising bartenders and bar staff.
Strong knowledge of beverages, cocktail preparation, bar service, inventory control, and
beverage costing.
Excellent communication, leadership, interpersonal, and customer service skills.
Strong organizational, problem-solving, and decision-making abilities.
Proficiency in POS systems, Microsoft Office, and restaurant management software.
Knowledge of food safety, health and safety, responsible alcohol service, and licensing
requirements.
Ability to work flexible hours, including evenings, weekends, and public holidays.
Professional appearance, integrity, accountability, and ability to work effectively in a
fast-paced environment.
Reporting Relationship
Reports directly to the Restaurant Manager.
